<p>I have to credit the folks at Tengu for packing in a lot of clam flavor into this jerky, but that&#8217;s really all your getting here, aside from a strong salt flavor. I&#8217;m not sure Americans want to eat dried clam for the sake eating clam, however. At least I don&#8217;t. I&#8217;d be more interested in this if they could add some other taste interest, like hot sauce, or wasabi.</p>
<p>Still, for those folks who want lots of clam flavor, maybe this is your thing (or at least until supplies disappear from store shelves). For myself, this comes across as being rather tiring, and I&#8217;m losing interest fast.</p>
<p>You&#8217;ll definitely need to get some strong breath freshener afterwards.</p>

<p>This sweet &#038; hot variety from Mr. Z. is mostly a snackable jerky, providing some decent flavor, a good chewing texture, and some ease in eating. In trying to decide if it&#8217;s above average, I couldn&#8217;t find anything. It&#8217;s overall flavor is enjoyable, but still largely average.</p>
<p>While it does live up to being a sweet &#038; hot variety, it doesn&#8217;t really punch that flavor out of the ballpark. It&#8217;s just moderately sweet, and maybe mild-medium in terms of being hot. You&#8217;re getting a low level of hot that 80% of the people in the world can tolerate. When I evaluate a sweet &#038; hot variety, I want something so sweet that it brightens up my day, and then socks me in the gut with some burning hot flames. It just doesn&#8217;t do this.</p>
<p>And the overall flavor is not really that exciting. It&#8217;s just the moderate level sweet &#038; hot, some saltiness, and traces of garlic and natural meat flavors. It&#8217;s rather plain, but still snackable.</p>
<p>Compared to Oberto, Jack Link&#8217;s, Bridgford, and other mass-market brands, it&#8217;s right on par. If Mr. Z. can keep its prices low, and stick with the 4oz package size, compared to the 3.5oz sizes the other brands are using, I think it&#8217;s poised to grab some market share.</p>
<p>My recommended beer pairing, a wheat beer or hefeweizen, I think will compliment this well.&#8221;</p>

<p>Follow these recommendations for safe handling of meat and poultry:</p>
<p>* Always wash hands thoroughly with soap and running water for at least 20 seconds before and after handling raw meats.<br />
* Use clean equipment and utensils.<br />
* Keep meat and poultry refrigerated at 40ºF or below. Use ground beef and poultry within 2 days, red meats within 3 to 5 days or freeze for later use.<br />
* Thaw frozen meat in the refrigerator, not on the kitchen counter.<br />
* Marinate meat in the refrigerator. Do not save and re-use marinade.</p>
<p>When preparing jerky from wild game, it is important to remember that the wound location and skill of the hunter can affect the safety of the meat. If the animal is wounded in such a way that the contents of its gut come in contact with the meat or the hunter’s hands while dressing the meat, fecal bacteria can contaminate the meat. It is best to avoid making jerky from this meat and use it only in ways that it will be thoroughly cooked. Deer carcasses should be rapidly chilled to avoid bacterial growth. The risk of foodborne illness from home-dried jerky can be decreased by allowing the internal temperature of the meat to reach 160ºF, but in such a way as to prevent case hardening. Two methods can be used: heating meat strips in marinade before drying or heating the dried jerky strips in an oven after the drying process is completed. Directions for both methods are below. When the strips are heated in a marinade before drying, drying times will be reduced. Color and texture will differ from traditional jerky.<br />
Preparing the Meat</p>
<p>Partially freeze meat to make slicing easier. The thickness of the meat strips will make a difference in the safety of the methods recommended in this book. Slice meat no thicker than ¼ inch. Trim and discard all fat from meat because it becomes rancid quickly. If a chewy jerky is desired, slice with the grain. Slice across the grain if a more tender, brittle jerky is preferred. A tenderizer can be used according to package directions, if desired. The meat can be marinated for flavor and tenderness. Marinade recipes may include oil, salt, spices and acid ingredients such as vinegar, lemon juice, teriyaki, or soy sauce or wine.<br />
Jerky Marinade</p>
<p>* 1 1/2 &#8211; 2 pounds of lean meat (beef, pork or venison)<br />
* 1/4 cup soy sauce<br />
* 1 tablespoon Worcestershire sauce<br />
* 1/4 teaspoon each of black pepper and garlic powder<br />
* 1/2 teaspoon onion powder<br />
* 1 teaspoon hickory smoke-flavored salt</p>
<p>Combine all ingredients. Place strips of meat in a shallow pan and cover with marinade. Cover and refrigerate 1-2 hours or overnight. Products marinated for several hours may be more salty than some people prefer. If you choose to heat the meat prior to drying to decrease the risk of foodborne illness, do so at the end of the marination time. To heat, bring strips and marinade to a boil and boil for 5 minutes before draining and drying. If strips are more than ¼ inch thick, the length of time may need to be increased. If possible, check the temperature of several strips with a metal stem-type thermometer to determine that 160ºF has been reached.<br />
Drying the Meat</p>
<p>Remove meat strips from the marinade and drain on clean, absorbent towels. Arrange strips on dehydrator trays or cake racks placed on baking sheets for oven drying. Place the slices close together, but not touching or overlapping. Place the racks in a dehydrator or oven preheated to 140ºF. Dry until a test piece cracks but does not break when it is bent (10 to 24 hours for samples not heated in marinade). Samples heated in marinade will dry faster. Begin checking samples after 3 hours. Once drying is completed, pat off any beads of oil with clean, absorbent towels and cool. Remove strips from the racks. Cool. Package in glass jars or heavy plastic food storage bags. Vacuum packaging is also a good option.</p>
<p>If the strips were not heated in marinade prior to drying, they can be heated in an oven after drying as an added safety measure. Place strips on a baking sheet, close together, but not touching or overlapping. For strips originally cut 1/4 inch thick or less, heat 10 minutes in an oven preheated to 275ºF. (Thicker strips may require longer heating to reach 160ºF.)<br />
Making Jerky from Ground Meat</p>
<p>Jerky can be made from ground meat using special presses to form or shape the product. Disease-causing microorganisms are more difficult to eliminate in ground meat than in whole meat strips. (If ground meat is used, follow the general tips for safe handling of meat and poultry, above.) Be sure to follow the dehydrator manufacturer’s directions when heating the product at the end of drying time. Again, an internal temperature of 160ºF is necessary to eliminate disease-causing bacteria such as E. coli O157:H7, if present.<br />
Storing the Jerky</p>
<p>Properly dried jerky will keep at room temperature two weeks in a sealed container. For best results, to increase shelf life and maintain best flavor and quality, refrigerate or freeze jerky.</p>

While a smoker can create a softer, more pliant jerky if that is your goal, the true benefit of smoking meat is the depth of flavor one can achieve as one varies the environment. Drier environments can also be achieved using a smoker, so they can offer great flexibility in terms of the final product. If you decide to use a smoker do not use any soft woods such as pine, fir or conifer due to the potentially dangerous compounds present in these types of wood. Alder chips or apple wood are excellent choices for wild game as the flavors compliment each other nicely. -</p>

<p>1. Post in a forum or blog that you already belong to. Join internet communities and use a link to your jerkydirect website in your &#8220;forum signature.&#8221;</p>
<p>(I&#8217;ll show you how to do this specifically in my training packet and as a BONUS, show you a blog that I have personally recruited from.)</p>
<p>2. Post on Craigslist.  Craigslist does not tolerate spam, however, there are several places on Craigslist that you can post ads for your website, and not just for network marketing. Remember, you are a full fledged retailer now too! Remember, posting on Craigslist is free. (I have a video in my training packet on how to post to Craigslist in case you have never done it. *It&#8217;s okay, you are not alone)</p>
<p>3. Article Marketing. There are several websites that you can submit articles too. Writing articles will help solidify your place as an expert in your subject. When people view you as an expert, they are MUCH more likely to Buy from you. (In my packet I will show you my top 3 places to submit articles)</p>
<p>4. Other free places to post ads&#8230;including pennysaver.com (more like this in the training packet)</p>
<p>5. Paid advertising, when you are ready to start driving massive people to your website, you can use pay per click advertising. Google, Yahoo, and MSN each have a great network and it has never been easier to advertise on the internet. (My packet will include helpful links to get you started)</p>
<p>6. Fundraising &#8211; Consider taking orders for a fundraiser (much like girl scout cookies but healthier!) Buy wholesale from your own website! Then split the profit with your charity or school of choice. Help out a good cause and benefit in return, what could be better? (My packet will go into detail on how to do this in YOUR AREA. I have the order forms ready for you and will tell you what to say to charity or school fundraising committees.)</p>
